We all know by experience that Jollof Rice (or any other type of food for that matter) tastes so much better when it's cooked on Fire-Wood. The thing that most of us may not know for sure is; "Why is Fire-Wood grilling and cooking tastier than Gas, Electrical or Kerosene Stove cooking???"
Most people will say its because its wood or because of the smoke. Well, they're partly right
When you burn wood you get smoke which has some of the smells and flavors of the wood in it. Those are passed on too the Jollof Rice, meat,or any other meal and give it a nice smoked flavor. The slow cooking has a lot to do with it too because it allows the tastes to get deep inside the food. Gas and electric don't have this and give you the more natural meat taste, with no other flavors. personally I like the smoked method
Now did you know that there are different types of wood and each of them have a distinct aroma and flavour that diffuses into your food when cooked on them?
According to The Forest Encyclopedia, smoke flavor is influenced more by the climate and soil in which they are grown than the species of wood.
